100% Petit Manseng, grown on calcareous soils in Chateau BouscassĂ© estate. Low yielding, harvested throughout December in numerous ‘passages’ CuvĂ©e Frimaire is almost an ice wine, where the half-dried grapes reach maximum concentration. Produced only in the best years – 1994, 1995, 1996, 2000, 2001 – it is aged on its fine lees in new oak barrels for 16 months. It develops gorgeous autumn fruit flavours – quince, apricot – and lychee and after 10 to 12 years, it gain considerable complexity when white truffle flavours start developping.
