Set up in the Summer of 1999, Le Caveau specialises in importing artisan wines, sourced directly from small, family-operated vineyards from around the World. To give more dimension to our portfolio, we have hand-picked a selection of wines from World leading estates, sourced from fellow Irish, UK and French wholesalers.
The wines we love and promote truly reflect their region of origin and their terroir, they deliver the right balance of purity, natural freshness and drinkability (and dare we say, digestibility!) To achieve this, winegrowers cannot cut corners, they adopt sustainable work ethic in the vineyards and ‘light hand’ approach in the winery. They produce their wines as naturally as possible, avoiding systematic use of additives.
We have tasted all the wines on this website, with the grower by our side, at wine shows around Europe, with guests in our Kilkenny shop or with a meal at home.
This knowledge of our wines, combined with the small structure of our company and the passionate way we feel about our work, is your guarantee for real, quality service.
Our wines are available to private customers through this secure website and from our shop, based in the lovely Medieval City of Kilkenny. We also supply leading restaurants and wine shops across Ireland via our Wholesale Department.

Meet the team:
Born in Gevrey-Chambertin, Burgundy, Pascal Rossignol has worked for three years with Burgundy wine producer and first cousin Joseph Roty (1985-1987) before to embark in a career in the Restaurant and Hotel industry (1988 – 1999). He opened Le Caveau wine shop in Kilkenny with Geraldine in August 1999. The wholesale side of Le Caveau was developed the following year, with the goal to supply true to their origins, Artisan wines to the leading Wine Bars, Restaurants, Hotels and Wine Shops across Ireland.
Geraldine Rossignol grew up in Augha, Co.Carlow, she worked in the Hotel industry in Ireland, UK and France.
Geraldine split her time between Le Caveau wine shop, website orders management and accounts. A true “cordon bleu” she enjoys cooking at home, visiting fine restaurants and loves experimenting with food and wine matching.
Wholesale Account Manager for the South and West, Colm McCan joined Le Caveau in June 2014. Colm grew up in Co. Tipperary in the family guesthouse business, a listed historic property with a 250 year old wine cellar so no surprise that Colm has been interested in all things wine related since. Following completion of studies including Diploma in Business Management (Hotel and Catering Management – Block Release) GMIT, and wine studies through the WSET, Colm has worked in high profile hotels and restaurants both in Ireland and overseas for the past 25 years, joining Ballymaloe House in 1995 as head sommelier, a position that won him much praise from patrons and peers alike, including Food and Wine Best Sommelier in Ireland in 2014. Colm is head wine lecturer at the Ballymaloe Cookery School and he is the organiser of the wine and drinks events of the late, internationally acclaimed Kerrygold Ballymaloe Literary Festival of Food and Wine (LitFest), bringing together top names of the Irish and International wine and drinks World.
Fiona Cashin, Wholesale Account Manager for Dublin. After a spell spent in the Restaurant Industry including the Wine Cellar at Fallon & Byrne and Charlotte Quay, Fiona’s decided to take the leap to a career change and joined Le Caveau in March 2017. Fiona’s enthusiasm and energy are quite contagious and has been instantly ‘adopted’ by her colleagues and customers

Shop and Admin Manager Charles Rossignol excels at multitasking. He effortlessly switches from leading an impromptu tasting in the shop to updating the rest of the team on the whereabouts of our latest shipments from Georgia. He is a true Natural Wine aficionado and enjoys sharing his passion with our Customers.
Shop and Admin Assistant, Margaret Murphy truly enjoys the World of Wine, particularly its Artisan side. Margaret has worked with Co. Carlow Farmhouse Cheese producer Elizabeth Bradley and is a very skilled (Gaelic) Football player.
