Red: NICOLAS REAU, POMPOIS ROUGE (Cabernet Franc, Loire)
  • The 50 year-old Cabernet Franc vines used for Pompois are planted on clay-limestone dotted with small stones; viticulture follows organic principles. Manual harvest, the grapes are de-stemmed for alcoholic fermentation. Fermentation (wild yeasts) takes place at first cement tanks, followed by oak barrels. 5 weeks’ maceration (without punching down, pumping over is performed gently two to three times). No fining or filtration and no added sulphur. Explosion of black fruits, plum and red berries followed by lively, yet velvety ripe dark fruit on the palate.

Red: VALPOLICELLA 'SASETI', MONTE DALL'ORA (Veneto)
  • Valpolicella Saseti is a blend of Corvina, Corvinone, Rondinella, Molinara and Oseleta fermented in stainless steel with natural yeasts, it is unfiltered and unfined. Ruby red colour with purplish reflections, and scents of red fruits such as cherries and juicy red plums with a hint of bitterness. On the palate, the fruit is vinous, with a suggestion of dew-covered grass. The minerality of the estate’s limestone soil is evident in this wine and the finish tasty and fresh.

Red: CUVÉE DU CHAT, Jean-Claude Chanudet et Marie Lapierre (Gamay, Beaujolais)
  • Vin de France "La Cuvée du Chat" drinks like a cru from Brouilly. It comes from the granitic soils of a tiny 2.5-hectare parcel bought by Jean-Claude Chanudet and Marie Lapierre from a friend in 2010. The parcel was planted in 1945, and once belonged to Jules Chauvet. The beautiful Gamay grapes from these 80-year old vines are handpicked in October, after which Carbonic maceration with natural yeasts occurs in an enamel tank with some pumping over to stimulate activity. The wine is then moved to foudres to rest on lees before finally being bottled with minimal SO2. Super supple and velvety on the palate with juicy fresh red berry, cherry and blackberry dancing on the tongue.

White: ANGIOLINO MAULE, MASIERI BIANCO (Garganega, Trebbiano - Veneto)
  • Masieri Bianco (a blend of Garganega and Trebbiano plus many other grapes depending on the year) fermented in stainless steel with no skin contact and bottled with a minimal amount of sulphites. Delicate notes of lemons and lime, almond and hawthorn flower. On the palate, dry, almost tart yet full-bodied leading to a distinctly nutty finish. Dangerously drinkable!
