Trousseau Noir comes from organically farmed Omero Vineyards which is set on the hills of Ribbon Ridge, with slopes exceeding 30%, guarded by forests on three sides. The inaugural release of this wine is an amazing surprise! After fermentation with native yeasts the wine spent 10 months in mostly used barrique. Though pale in colour, a common trait with this varietal, the depth of flavours and the complexity on the palate is invigoratingly pure. Spicy floral notes dominate the highly lifted aromatics. On the palate crisp red fruits dominate and gain depth with air. There is a slight candied aspect on the fruit that maintains its freshness.
MINIMUS WINES, Chad Stock – McMinnville Organic
Originally from Concord, California, Chad became interested in wine after learning that Fresno State offered a degree in viticulture and enology. Until then, he had planned to study business.
After graduating in 2006, he landed a harvest job at Rudd Wines in Oakville, California. The next year, he moved to Oregon to work at Antica Terra. Chad would then work at Two Hands, Johan Vineyards, and Durant Vineyards.
In 2011, Chad launched his own wine label, Minimus. And he joined the team at Omero in 2016.
‘Our core philosophy: to produce the most pure and natural product, one must use minimal interference.
We Aim to challenge the formal education of Enology. The results will be numbered when released & only produced once. The direction of the project is constantly evolving as new discoveries and inspiring ideas come to our attention. We are uncertain of how or when the experiments may end.
