Bruyère-Houillon Arbois Ploussard Another beautiful, elegant and light wine by Renaud and Adeline from the local Ploussard grape variety. The vines are planted on Triassic clay and limestone, the ideal condition for Ploussard. De-stemmed by hand, semi-carbonic maceration (where enzymes in the grape are responsible for fermentation of the sugars inside the grape). As the grapes break down, normal alcoholic fermentation begins via the yeasts on the grapes and this occurs in a tank for 32 days. The wine is bottled without any filtration and without the addition of any sulphites.

Biodynamic, natural     

Renaud Bryuyère and Adeline Houillon take care of only 4.5 hectares of low-yielding vines, so their production is rather small. Their parcels are farmed biodynamically, like more and more young winemakers in the area.

Their red wine vineyards are located near the village of Pupillin, sitting on the hills above the main town of Arbois. Pupillin is known as the “World Capital of Ploussard” and is home of natural wine legend Pierre Overnoy, whom Renaud worked for in the mid-2000’s.
