Lively, clean and precise, with notes of almond, spices and mineral. The palate is rich and complex, with flavours of nuts, cinnamon and gingerbread. A classic example of this style, with some unexpected notes of citrus fruits as well.
100% Savagnin, certified organic and biodynamic. This wine was placed in a Burgundian barrel, ouillé or topped up the first year to maintain the fruit aromas and then left without topping up while maturing in a cold cellar, so as not to accelerate the process, for more than 6 years. A kind of flor/veil forms on the surface of the barrel which nourishes and protects the wine during this period. 1/3 of the total volume evaporates. After this period, "la percée" or breaking of the veil can take place, when the wine bottled. 62cl remains from a litre afetr the period spent in barrel, non-ouillé, hence the wine is bottled in special 62-cl bottles, called Clavelin.
DOMAINE PHILIPPE & TONY BORNARD, Arbois – Organic, Natural
Philippe Bornard lives at the top of the village of Pupillin and farms about seven hectares, which he inherited from his father. After years of selling grapes to the local cooperative, and with the urging of his good friend and Jurassic legend Pierre Overnoy, in 2005 Philippe made the move towards vinifying and bottling his own wines. He makes wines in same very natural vein: unfiltered, unfined and with no added Sulphur. The estate has now been handed over to Philippe’s son Tony Bornard.
