Pascal Rossignol

Born in Gevrey-Chambertin, Burgundy, Pascal Rossignol has worked for three years with late Burgundy wine producer and first cousin Joseph Roty (1985-1987) before to embark in a career in the Restaurant and Hotel industry (1988 – 1999). He opened Le Caveau wine shop in Kilkenny with Geraldine in August 1999.

Geraldine Rossignol

Geraldine Rossignol grew up in Augha, Co.Carlow, she worked in the Hotel industry in Ireland, UK and France.

Geraldine split her time between Le Caveau wine shop, website orders management and accounts. A true “cordon bleu” she enjoys cooking at home, visiting fine restaurants and loves experimenting with food and wine matching.

Colm McCan

Wholesale Account Manager for the South and West, Colm McCan joined Le Caveau in June 2014. Colm grew up in Co. Tipperary in the family guesthouse business, a listed historic property with a 250 year old wine cellar so no surprise that Colm has been interested in all things wine related since. Following completion of studies including Diploma in Business Management (Hotel and Catering Management – Block Release) GMIT, and wine studies through the WSET, Colm has worked in high profile hotels and restaurants both in Ireland and overseas for the past 25 years, joining Ballymaloe House in 1995 as head sommelier, a position that won him much praise from patrons and peers alike, including Food and Wine Best Sommelier in Ireland in 2014. Colm is head wine lecturer at the Ballymaloe Cookery School and he is the organiser of the wine and drinks events of the late, internationally acclaimed Kerrygold Ballymaloe Literary Festival of Food and Wine (LitFest), bringing together top names of the Irish and International wine and drinks World.

Fiona Cashin and Colm Douglas

Fiona Cashin, Wholesale Account Manager for Dublin. After a spell spent in the Restaurant Industry including the Wine Cellar at Fallon & Byrne and Charlotte Quay, Fiona’s decided to take the leap to a career change and joined Le Caveau in March 2017. Fiona’s enthusiasm and energy are quite contagious and has been instantly ‘adopted’ by her colleagues and customers.

Colm Douglas, Wholesale Account Manager for Dublin joined Le Caveau in April 2019. Colm has been on Dublin's Wine Trade Scene since 1999, working with Berrys Bros and the Corkscrew Dublin. Absolute pleasure to see Colm's depth of knowledge, lengthy experience and brilliant personality joining our team.

Shop and Admin Assistant, Margaret Murphy truly enjoys the World of Wine, particularly its Artisan side. Margaret has worked with Co. Carlow Farmhouse Cheese producer Elizabeth Bradley and is a very skilled (Gaelic) Football player.
