‘Ottavio Rubé Bianco’ is a blend of Cortese and Timorasso (an indigenous white grape), unfiltered and unfined so may throw a light sediment. It is a delicious and thirst-quenching mix of summer flowers, yellow plums and wild herbs held together by racy minerals.

Cooperativa Agricola Valli Unite was established in the late 1970s by three young men—Ottavio Rubé, Enrico Boveri, and Cesare Berutti—who shared a vision for sustainable farming during a time when many were abandoning the countryside for urban opportunities. Nestled in the Tortona Hills of Piedmont, Italy, the cooperative grew from a love of the land and a commitment to organic and biodynamic principles, which are still upheld today.

Now a thriving community of four families and 30 members, Valli Unite oversees over 100 hectares (25ha of vines) of organically cultivated land. The cooperative’s operations extend beyond winemaking, encompassing cheesemaking, animal husbandry, and a range of hospitality services, including agritourism with apartments, a restaurant, camping facilities, music festivals and a farm shop featuring their own organic products.
