Rocher de la République Blanc IGP Pays D'Oc is a certified Organic blend of Rolle / Sauvignon / Viognier on clay-limestone from the Montpellier Area.
Displaying a bright, light yellow robe, this wine delivers a complex aromatic bouquet, delicately combining fruity hints of citrus and white-fleshed fruits with delicate floral notes. On the palate, its supple and balanced texture unveils a harmony between fruity freshness and structure. To be enjoyed as an aperitif or paired with octopus carpaccio, marinière mussels, or even with crunchy vegetable pickles.
The grapes are destemmed and then immediately pressed upon arrival at the winery. Cold settling for 24 hours is followed by fermentation at low temperature (18°C). Vinification occurs in concrete and stainless steel tanks to enhance the expression of the fruit and the terroir.
