The selected grapes are destemmed upon arrival at the winery and then put into vats. Vinification takes place in concrete and stainless steel tanks with soft daily pump-overs to enhance the expression of fruit and terroir. Rapid racking after malolactic fermentation and aging in tanks to optimize the preservation of aromas.
