BRUTAL ANCESTRAL PET NAT, BODEGA CUEVA by MARIANO is a pet nat made from Muscat d’Alexandrie and Macabeo. This is a delicious mouthful of summer fruits. Made in the ancestral method, fermentation begins in tank and finishes in the bottle, thus capturing a natural fizz. Zero additives, neither fined nor filtered.
BRUTAL ANCESTRAL PET NAT, BODEGA CUEVA by Mariano Taberner, Valencia.
Mariano Taberner founded Bodegas Cueva in 2000, when he took over an 18th century winery. He works from 8 ha and purchases from long-term small producers. One of the first to be certified organic (the vineyards have never seen a synthetic chemical). The team's respect for the environment and for the health of their soils is obvious when you take a walk through the vineyards, where biodiversity is preserved and encouraged. Mariano knows this land intricately and he is able to convey the magical of this part of the Mediterranean into his grapes and wines.
Cueva hosts a variety of 100+ year old centenary vines of Tempranillo, Bobal, and Tardana (a white grape that is used for most of the sparkling wines). All of the wines are kept naturally cool in long underground cellars. Mariano’s winemaking is quite unique and experimental, using unconventional fermentation techniques and vinification methods.
