Poliphonia Restaurant, Georgia - Irish Tour August '26

We are super excited to welcome Poliphonia Restaurant, Tbilisi. -Georgia in Ireland in August '26. Owned by John Wurdeman of Pheasant's Tears winery in East Georgia, Poliphonia restaurant is known to revisit classic Georgian cuisine, using the freshest seasonal ingredients and serving the very best natural Georgian wines.

Poliphonia team will be touring and cooking in Ireland from August 9th to 17th '26.

Glossary 

* Georgian Supra: 

This is a shared long-table style dinner, so seating will be free and dishes will be served family style. The word ’Supra’ means tablecloth and it describes how shared dishes accumulate over the course of the meal to cover the table to include a variety of vegetable and meat dishes, breads and fermented foods using the finest of Irish local ingredients.

As much as the food, wine is as integral a part of the Georgian meal. Georgia is the oldest wine-producing region in the world, which dates back 8000 years. Traditional Georgian Wine is fermented and aged in Qvevri (large clay amphorae buried underground), which gives them a very unique, individual flavour - they are the perfect wines to pair with the myriad of flavours served at a Georgian Supra. To help explain these fascinating wines, we are delighted to welcome John Wurdeman of Pheasant’s Tears Winery to guide us through the wines and lead the toasts. John is an eloquent speaker who has the ability to transport one to Georgia through words. Every Supra has a Tamada (Toastmaster) so John will be our Tamada for the evening.

As toasts are key to the Georgian Supra, we have included drinks for toasting. It will however be possible to purchase additional wine on the evening. 

(Note: as dishes are shared, it is not possible to cater for individual dietary requirements)

** Georgian Bottles and Bites: 
Georgian Nights, light bites and wine, are very casual, guests can arrive at their preferred time, between 6pm and 8.30pm. A selection of Georgian light bites, and a flight of 4 glasses of Georgian wines (70ml)  are included in the ticket price. John Wurdeman and the Poliphonia team will be at hand to share Georgian stories. Extra bottles and glasses will be available to purchase on the night.
